Yes the "toggle UI" can be bound in setting, but that is not all of the UI.
Taking a SS without having to go into settings un-tick certain elements then having to go back in after to turn them back on would be nice.

Has anyone worked out how to remove the Group members icon and Quest NPC follower icon yet?

It would be nice to be able to bind these to a key, even if it's a macro.

I know from playing other games that a .lua can be set up to toggle a list of UI... I just don't have the know how to find out the code.

If you open your journal (default key is J) you can deselect quests and they wont show on your HUD and their markers wont show on your screen.

Also helpful for hiding any quests that aren't in your current location or if they are for a higher level.
