I have decided go ahead and try being a sorcerer, but I'm stuck between making them a magicka or stamina based character. What are your opinions on both Magsorc and Stamsorc?
I know Erickson talked about it in a previous post, but Idk it goes well for a Magsorc as it makes complete sense for it to fit into a Stamsorc. I'm stuck in between right now. I'm switching between stam and mag right now. I'm trying to choose just one in order to stick to it for the reminder of that character.
Well if you're going for organised trials you'll want stam sorc, combined with mk. Sorcs are not the strongest dds atm so you'll usually have a sorc either mk or healer.
Of course if you just want to do some casual trials then you can go mag as well, but they're not seen much outside of oakensorcs.
WW is stam. In trials it would also be Stam Sorc, because of medium armor passives being more desirable. So be Stamsorc. But make it Dark Elf so you can switch however you please if you get tired or meta changes.
Solo as in through the dungeon/trial finder? It would depend on the trial but oakensorc is fine for most trials, you won't do the most dps but it's okay. As for mk sorc you might not do as well with that since wearing a buffset in unorganised groups can be a bit risky since you don't know if it's needed/someone else is wearing it etc.
I would probably recommend just trying a few different setups out and see which you like because it's very easy to respec, and if you're not going for the harder hms then pretty much anything is doable.

What weapons are you going to use? Destro weapon (ice, fire or lightning) including Restoructiion staff are all magica based (when you do a heavy attack you will get Magica back). All those weapon have also range, so you can stay a bit away from target (including friendly targets for healing).
Stamina weapon on the other hand with exception for Bow that is a ranged weapon will instead return Stamina from light and heavy attack.
When you ask a question about magSorc vs stamSorc, then it also depends on what you main goal is here. Is it to do dungeons as healer or damage dealer, or even tank? Are you going to use pets/minion or do you want to have a sorc that can manage without managing pets?
In short you need to provide more background and explain what your goal here is and avoid having too many goal at the same time.
A PvP sorc will need to be much more mobile and have higher health pool then in PvE. It does also depend on what gear you have access to as if you start with dungeons you will get monster sets (need to do veteran dungeons to get head and buy with keys chests at undaunted dungeon NPC ofr shoulder pc). From there you might be going to do harder DLC dungeon or start to do Trails. You can also craft gear if you have material and have done enough research to unlock traits.
I hope you also know that with armoury you reset your base stamina, health, magica pool (and everything else) if you interact with an armoury that have an empty slot. Learn about armoury (it is free to "purchase" in Crown Store and is a furniture that you place in one of your free homes which you can get one for each character from "A Room to Spare" quest.

(West Weald have one room at an Inn if you use your Room to Spare quest - you can walk up to Felande Demari in Inn that is in Skingrad and start that short quest to get a room for free as long you haven't done it on that character - create a new one only for get that room and delete that character in case you have already done it once on your main character.)
I know there was a video showing her in Skingrad, but couldn't find it, so here is video showing her at Auridon. You don't need to start quest from getting that thing on wall or pick up any documents, if you know where to go and which NPC to search for as you can just walk up to her and she will give you all those lines to complete quest which reward you with an account wide room (house).
With this you can try out what works best for you as for stamina or magica build and reset everything if you need to adjust how much stamina, health or magica you have as a base. When you start (before you get CP), some HP might help to stay alive longer, later some stamina can be useful even on a magica build. Make sure that you have 5 of a set to get an active bonus from the 5th Set. Jewels and weapon can have same set or different, just make sure when you use a set on weapon that it wont disable the 5th bonus.
Monster set is a 2 set item, meaning you will need to have the same Set on head and shoulder (if you are going to benefit of the 2nd Set as active which in general is the reason why player would equip a monster set).
We also have Mythic set which you can read more about here, but it is something that might take some time to get and is depending on your luck as you need to collect leads and level up your two skill line for digging up items.
ESO HUB have plenty of guides to explain how things work in this game and UESP have a lot of wiki information about game.
Like every source based on community and willing player to update information as changes are made in game, there mightt be outdated information or things that aren't explained.
Both are good source to start learning how this game work and for getting started.
Avoid jumping on builds without checking how old those suggested builds are as some might be not working as well after some patch changes to how skill or classes work today. In general set items that where good might have been nerfed or changed and with how Campion Points where changed, Companion introduced and other things that also impact on progression and getting to a certain goal it is necessary to be careful to just take for granted which build will the best for what you want to do.
Sorcerer have been through a lot changes and nerf several times over the years it have existed (I started this game with a sorcerer in 2014), so you can be sure that you will find a lot of players suggesting builds, but without explaining what might need to be adjusted to be working in today's version of game.
