Good question. I do notice that once you get max mount stamina you rarely get knocked off, but am not sure. My guess would be the amount of damage. Generally if you are being attacked in Cyrodiil, even with all mount training at max your character’s damage goes down, and if you take enough damage you will either be knocked off your mount or killed while still riding.
