It would probably help if you put the entire question into the title, so people who are interested in the idea will know to look at it. Click bait titles tend to get ignored.
Or if it's too long make the title something like 'More Fighters and Mages Guild story?' and then put the question as a complete sentence in the post. Anything to make it clear what this is actually about.

I'd have the fighter's guild bring back some "one and done" contract work as part of the story. Not to replace the current dailies or anything, but a storyline that shows how, once the plane meld was averted, they got back to more or less their usual business.
No idea what to do with the mage's guild. Shalidor annoys me something fierce, so no more of him, please. Maybe have them actually do something with Eyevea since we went to all that trouble to get it back?
Maybe have the fighters guild members hunting for rats like in previous elder scrolls games. Or the Rat Whisperer's family.
The mages guild could find ancient dungeons and caves beneath the guild houses that lead us to battle a new evil, and as a reward unearth a NEW mages guild skill line like using a one-handed weapon in one hand plus a one handed spell in the other hand. I'm so excited!
I always missed an advancement system, like in Oblivion. I know that at the very end you get “Master Wizard” in MG and “Victor” in FG, but I never felt that I rose through the ranks of the guilds themselves. In my head, after everything, I feel like we are all still technically “associates” in both guilds.
So at the end of each storyline, I would’ve liked to have a choice of, maybe, radiant quests or challenges or something that allowed you to “rank up” and maybe earn some cosmetics along the way.
