I sometimes call Mirri to interrupt something when i am dealing with a boss that has an interrupt mechanic as solo. Others they are there for achievement points.
Bastian: Tank (Sword and Shield) Mirri: Bow DPS Ember: Fire Staff DPS (Built to frequently spam her ULT) Isobel: Two Handed DPS Azandar: Healer S.A.N: Dual Wield DPS
If two more Companions are added, one I plan to build as a Shock Staff DPS and the other a Frost Staff Tank (I doubt will go well, but Azandar, Bastian and Ember already cover effective roles).

I can't bring myself to use one. I don't know why. When they were announced I thought they sounded like a good idea, but I just find them to be an inconvenience. I have about as much motivation to use one as I do to use a sorc pet. I don't even like using the warden bear. I can't use them as houseguests because my bankers, merchant, armorer etc take up all the slots.
They are usually either Tank or DPS, but the main purpose is to make it so I am not the sole focus of attention. It allows me sort through the mobs attacking my character with fewer distractions. As such, their ultimate reason for being there is simply to not die too soon.

That doesn't make sense - everyone knows that the red shirts are the ones dying the fastest. Sorry, I'm a Trekkie, couldn't resist...
My constant companion is Bastian. Usually he provides additional damage and healing for my adventures. (via destruction staff and class/guild skills)
If I have to dig out the character I made as a damage dealer, to help a friend with dungeons (or farm for a lead in one myself), Bastian will tank for us, and does a great job.
All 2H sword DPS, which in itself can be of some help. Mainly that way they don't reset bosses. But to be fair they are really only there as RPG props.

Ember : DPS Fire staff - Is part of khajiit's family, really. Over 4.5k rapport on all 19 khajiit characters and even 1 argonian with fluffly delusions.
Mirri : DPS Bow
Isobel : Healer Rest Staff
Sharp : DPS 2handed
Bastian : Tank S&B
Azandar : Not sure yet - currently he goes between Rest Staff and Ice Staff with kinda-dps leanings.
Ember is khajiit's favorite, for reasons too obvious to mention. All the girls are lvl 20, maxed in guilds, weapons, armor and skills and get the most use when it actually matters (which is pretty much only doing WBs alone in dlc areas). Each of them could probably be shifted to other roles pretty easily.
Sharp is getting to 20 soon and is main for most of the time to get him maxed. Bastian is only 12, although he has grown on Khajiit and makes a very nice tanky nugget. Not sure what to make of Azandar yet. Likable enough, but not sure what he would be best at - only have him on a few characters.

Come visit Karth's Glitter Box, Khajiit's home. Fully stocked guild hall done in sleek Khajiit stylings, with Grand Master Stations, Transmute, Scribing, Trial Dummies, etc. Also has 2 full bowling alleys, nightclub, and floating maze over Wrothgar.(Pariah's Pinacle)
Recently made a dedicated build with Telvanni Efficiency and it upgrades the Companion experience sooo much, a must for who likes having them out all the time. I already had them all maxed but they still felt somewhat lacking... It's a different story when this Set is equipped.
Isobel as a Tank and Bastian as Oakensoul Buffer+Healer are the ones I use the most ATM, I also have Mirri pure Healer, Ember DPS, Azandar built for Buffs/Debuffs and Sharp kinda like he was a solo player.
Heavy Armour and Resto staff are the best combo in my opinion, unless you need a tank that stands still, then Sword and Shield.
I soloed Veteran Hard Modes of base game dungeons with them without the Telvanny Set, but I had to constantly maintain a Heal on them and still they died quiet some times. Now, with that Set on I only have to throw an emergency Heal in rare occasions and they keep themselves alive pretty well - most of the time their Health remains full.
People thought Quickened could be given up thanks to the new Set but if you still build to demolish cool downs, some skills can be fired literally every 1 second - so usefull!

Sharp - DW Axes AOE DPS/Tank (Frost and Axe build)
I like my companions to compliment my solo builds, so each one usually tags along with specific characters to shore up their weaknesses. Isobel is really the only general use companion I have.

Free 33% mitigation from pearlescent and sometimes gear drops, otherwise they're useless. It's nice if they don't die, but I would never really count on them.
Healers look great for solo but die too easily in the actual content. If you slot taunt they tend to die in aoe.
The only companion I use at all practically is Isobel as a sword & shield tank. I'd also like to level Mirri as a healer because her ult looks really nice for boosting damage.
Everyone else is set up a least a bit in a way that seems like it makes sense for their character, like Sharp as a dual wield DD. The main reason I use companions is for RP though and housing and stuff.
