Simply put, Make more races available. How you may ask could we add other races like the Lilmothiit, Sinistral Elves, and the Kothringi? DRAGON BREAK CHAPTER. This would allow the races to be implemented. You could even bring back the snow elves.
Snow elves are alive in the fourth era, in the second era it is possible to find them.
The size of the territory that is called Skyrim is bigger than in the games.

Lilmothiit are extinct. Kothringi are extinct. The Fallmer are extinct. If you really want more playable Races you should pull from the pool of ones already present in-game and abundant. Reachmen, Maormer, or the different Furstocks of Khajiit.Snow elves are alive in the fourth era, in the second era it is possible to find them.

Isn't it just one, Snow Elf is alive? And the Dragonborn lowers that number.

I support Maormer playable race but bringing back species that are already extinct or soon to be extinct is a no from me.
This seems like a really unimaginative assumption to me. There's no proof that the hidden chantry of Auri-El in Skyrim housed the only group of Falmer survivors in existence, Gelebor himself brings up the possibility of there being more of them. Maybe it's just wishful thinking on his part, maybe not, we won't know for certain until the writers decide one way or the other. But it wouldn't be breaking the lore if ESO or any future TES were to reintroduce a small number of them.
As much as I find some of the other races in Tamriel fascinating, especially the Ayleids, I don't think they should be playable. Not least because it would break with a lot of established lore.
While we know that some snow elves survived their extinction, there's so few (only 2 that we actually know of) that making them a playable race would be ridiculous. The same can be said about the Ayleids. They didn't have an obvious mass extinction like the Dwemer or Falmer, so there's more of an argument to be said that there might still exist some isolated settlement. But odds are they don't exist, as a lot of Tamriel has already been explored, mapped, and claimed by one king or another. You'd also have the same problem as the snow elves: there'd be so few left that making them a playable race would be too extreme.
I also really dislike the idea of pulling a Dragonbreak out of thin air to make anything you want happen. Honestly I think TES lore writers should lean away from such lazy writing in future games.
Honestly I think the games should just stick to the main playable races, just like the single player games do. If ever the game expands to encompass the First Era, then those other races should be playable, but otherwise no.

But introducing a small number of them isn't the same thing at all as making them a playable race. The latter would contradict the lore. A lot, actually.

Well see Dragon Breaks are a major part of established Lore. That is what happens when you try to split the personalities of a God. In fact it is most likely the entire 2nd Era is a Dragon Break. I mean we have had more World ending threats and activities happen in just 1 year of the 2nd era than all of the other eras combined. Yes keep that in mind, EVERY dlc and chapters has all happened within 1 year as confirmed by the developers.
Keep that in mind. We are still in the year 582 and during that time all the following Dlc and Chapters have taken place. Not to mention we have seen different forms of Daedra and Atronachs take form in this time period in the form of mounts and enemies that was NEVER mentioned in lore. Not to mention the classes that never existed in lore before (Dragon Knight, Templars, and Wardens).
Plus the history we get in the later Eras are fragmented, lost, or told by unreliable narrators at the best of times. So it would not be out of the realm of possibility that some of the extinct races to come back in the second era.

It's a fictional universe, the writers can write in whatever they like.
So yes, the more the merrier! You'd attract & keep more players with more options while maintaining the quality above par.

Nothing is set in stone in TES lore. Dragon breaks do happen. Cyrodiil is suppose to be a Jungle, but it is a plains in the 2nd era created by Talos who has yet to be born...
It is even stated, in lore, that many races such as the Limothiit and the Kothringi are still alive lead from Tamriel by the Imga during the events of the Knahaten Flu. So no they are not extinct.
Maormer will never be accepted by any faction or territory. They are a universally hated race, so are many of the reachmen except the very few we find in the Reach in ESO.
