One thing to bear in mind is there's no way to transfer anything between servers. Anything you buy outside the game like ESO+ or chapters purchased on the website will be available on both, but anything purchased or obtained in the game like crown store purchases (including chapters) or your characters and items in the bank will only be on the one server and there's no way to move them across. Also your crown balance is shared across both - if you spend crowns on the EU server they'll be gone from NA as well, but the items will only be on EU.
That may not be a big deal for you, but it's worth considering if you're planning to switch servers.

You are not “switching server” you are adding the other one. Everything you created is still there when you log in to the original server. I play on both NA and EU every day. Sure, buying some things twice is a pain, but getting 8 characters on each kind of offsets that.
