Cabbage Biscuits

If you saw the ESO 2023 Global Reveal video, then you know it leads off with a short on making cabbage biscuits. My wife and I copied the recipe from the video and tried them for ourselves. They are pretty good with a bowl of hot soup.

The one thing the video wasn't clear about was how many biscuits the recipe would make. We were able to make a dozen biscuits, each about golf ball size.

    No, not as a whole. Each step of the recipe was shown on the screen as they proceeded. We wrote it down as the video progressed. By the end of the video, we had the whole recipe.

    Here is the recipe as a whole:

    (..an important note - if you've never made bread dough by hand before, keep your hands generously coated with baking flour while handling the dough, or the dough will stick to your hands...)


    Cabbage Biscuits
    ½ head of cabbage, shredded and chopped
    2 Tsp salt
    2 Tsp Sugar
    ½ cup milk
    ½ stick unsalted butter
    1 egg
    1 Tsp instant dry yeast
    1 cup cooked, chopped bacon
    2 ½ cups flour

    350 degrees for 25-30 minutes or until golden brown
    • Shred/chop half head of cabbage
    • Add salt
    • Squeeze out as much liquid as possible
    • On medium heat, cook cabbage until lightly brown, remove from heat place cabbage into mixing bowl
    • Add:
    o Butter
    o Milk
    o Sugar
    o Yeast
    o Egg
    o Bacon
    o Flour
    • Mix all ingredients until they come together
    • Let dough rest for one hour
    • Separate into equal size dough balls onto non-stick baking sheet
    • Wash with milk
    • Bake at 350 degrees for 25-30 minutes or until golden brown

    Wow! That's almost exactly like my grandma's recipe for those - she used sausage instead of bacon, but I'm not a fan of sausage (other than smoky cajun) so I've always used bacon, and sometimes ham.

    [Edited because something about the "real name" of that sausage is censored? Sheesh.]
