Just a thought...
If it's difficult to set things up so we can lay down on beds, why not add interactable blankets? This way we could place a blanket on a bed, or anything we may have fashioned into a bed. Then, we would be able to click on it to lay down and sleep. After doing so, our character would animate in such a way as to crawl under the blanket.
Maybe you could also add interactable cushions as well? Placing these just about anywhere, even nestled inside a surface, making it invisible, but still interactable. Maybe letting us choose different ways to posture our sitting, like Indian Style, should the cushion be on the floor.
For maximum immersion, our characters remaining in their sleeping or sitting state even when loging out and logging back in.
Bonus: Companions are given the same functionality in this respect.

I think it would be nice to actually be able to use furniture the way it's normally intended. So, lying down on beds and sitting on chairs seems reasonable to me. I don't think we neccessarily need an extra bedsheet and blanket system though....

If we get usable beds, in the end it would probably look more chaste than it does now (oh, the awkwardness of trying to sit down next to each other but choosing the wrong sit animation or using it while the player character is facing the wrong direction)...

Whether sitting or lying down, or one player sits and the other lies relaxedly on his side... It always gets awkward (unless you want to sit really apart, which also looks weird if you're having a conversation). It basically always ends up like this:
*jumps on bed*
*tries to rotate into the right direction without falling from the bed and without stepping on the other character already sitting or lying there*
*sits down and accidentially hits other character's crotch with knee*

*stands upright on the bed again*
*rotates and tries different sit animation*
*sits down and accidentially slaps feet into other character's face*
