I tend to save them up for something really, really good (like the mounts I'm pretty sure were impossible to buy because nobody could have earned as many seals as required at the time). But then I got:
Iron Atronach shield for my DK tank
A flaming staff for my MagDK
A blue flaming staff for my lightning sorc; she also got the Soulrazer senche.
I finally just spent a bunch of seals for the cool doors from the Nightfall crown crates to use in a house I'm decorating! I've spent a few here and there before for small cosmetic items, too.
I don't even bother collecting them except by accident. It's a load of cosmetic stuff I really just don't care about any more. That though is how it should be having played some other games where it's not just bling from the lootboxes and cash shop.
Well, nothing for now. I take it easy with seals of endeavor, simply because there is rarely something I like.
When it started, I was still doing traits research and leveling up my horse, so I was taking some scrolls, but it was rapidly over. After that, I once purchased a horse. Since then, they just pile up, slowly as I do daily end. only when tasks are free of efforts and matching what I'm doing...

I haven't played often enough since this mechanic of gaining seals was released to have enough for even a normal apex mount. I have like 5500 or so. Too bad it wasn't there from the beginning of the loot boxes, cause then I'd have a ton, since I played the game to death from 2014-2019. Now-a-days I play infrequently. But if I were to save my seals for something, it'd be for that night sky looking ram radiant apex mount from a few crates ago.

I don't generally look at the previews & datamines. And I mostly get things in the 1-4k range (furniture, outfit styles). So I look at the shop every so often to see if there's something I want to get. /shrug
I have to save mine for any guar or kagouti I don't have. I've been waiting to see a radiant apex guar/kagouti, and I guess pangrit now too.
Thus far I've spent quite a lot of them on two apex variants. I'm just above 6k endeavors again. I know next crown crate season won't have radiant apex variants, so I should have a good amount of time to save up once more.
I usually use them to buy inexpensive low tier rewards and save crown gems for the expensive stuff. If I'm a few gems short of a legendary i want, I can just buy a few more crates, no big deal. If I'm a short with seals then there's no guarantee I'll be able to get enough in time for the crates to still be there, especially if it's a temporary bringback.
I would probably spend them if the system was tailored around 'your' style of gameplay.
I'm not a fan of obligatory 'grind quests' and I never end up doing them.
The only moment I will is if I see that I'm close to a purchase price of something that could be interesting, but it's quite rare.
I have no idea, I recently just spent 16k seals on the mount I was saving up for and now I have no plans for what to do with future endeavor seals, I guess I could save up for another radiant, not sure what one though.

I am so sad I did not all the crown crates I could afford trying to get them, or at least stock up on gems
I just got the Karthstalker Sabre Cat, which is one the rare things I wished was available outside of crates when it first came around. I've also gotten a few other things, mainly mounts and pets and I think the odd furnishing.
As other people said I don't really save them, there's just not a lot I want to get. There's 1 radiant apex mount but I missed that the first time around and I'm not trying to hold onto enough seals to get them, if there's something I really like I'll spend them.
