I'd like to see a friendly PVP event. Something fun that isn't to the death. Could be a snowball fight, mudball fight, water balloons, pie fight etc, everyone gets a prize (the victor gets more stuff, obviously) and it's optional.
This could be 1v1, 1v1v1, groups of however many. They could be held in arenas or just special zones.
Think about three teams of five from each faction, throwing their colours at each other - like the Hindu Holi festival - and the faction who paints the most wins
I think a fun, low-stakes event might encourage players to try the main PVP side of eso.
An event that increases the drop rate of furnishing plans and materials.
A trillion times yes! They seem to be getting stingier and stingier with these. I never get to decorate because of all the time I spend chasing being able to build the decorations I want.

Haunted House - The house itself is a 2-player dungeon/arena and you have to complete all the achievements associated with the house in order for you to earn it. Plot twist, the house has many past instances of murder and its up to you to solve them all to exorcise the tormented souls within so each run through will not always be the same.
I voted crafting because that could be neat, but you could argue Zeal of Zenithar is going to be filling that niche.
What I really want is for the existing holiday events to fleshed out and have something substantial added to them. Think of how cool it would be to have a whole witches festival themed dungeon or trial, or a special jester's festival PVP campaign where all kinds of whacky things happen like characters exploding into congfetti on death or the wabbajack spawning where volendrung normally does.
i'd like to see some Events focused on players' Guilds. Like Guilds competition and ranks in many spheres like: AP earned, fishies caught, TelVar obtained, group Arenas records and such (or divided by Guilds sizes or accounted per player).
Guilds are what untie and rally players in many other MMOs, while in ESO guilds are mostly the collection of solo players.
We still need AvA arenas, ToT tournaments, and, of course, the rewards motivating for the collaborate activities.
I don't think we've had one yet (if you exclude the community events that gave us the free houses, because the activities weren't housing-related). I'm not sure how they could make the quests interesting though, since 'decorating with a number of x category furnishings' is not very fascinating, but they could make story quests related to housing and then the rewards could be furnishings, style materials, crafting materials (*cough* mundane runes *cough*)...
Antiquities and Legerdemain event would be nice! Make it a treasure hunter themed event, put that outfit up for sale, and let us level those slower skills a little easier.
Okay, it seems that the top 3 seem to be Roleplay, PVE, and Housing. I thought that Roleplay would make it to the top 3. But I thought it won't be beaten by either of the two that beat it. So I declare Housing, the winner.
I guess a RP would be interesting. FFXIV had a server wide beach party and was even advertised in billboards. It was so popular that people couldn't not enter the server because so many people were there.
