I love to look at the running bi-pedals, followed closely by cats/wolves.
The ones I don't like looking at are bears (too much movement!), nix ox (I have arachnophobia, so all those legs make my skin crawl; oddly the dwarven spider doesn't affect me in a similar manner), and camels (they look like they're about to poop).
i started with horses --- and i have a few really nice radiant apex horses --- but once i rode a senche i cant ride anything else in this game --- every other mount just feels clunky
My favourite mount it the big old fat Bug everyone gets for free, even before the first horse. It is called the "Infight-Bug"! You can not see it, but you know it will always be there for you. Best mount ever!

Cats.
The horses are just wrong... they look like they were designed by someone who had never actually seen even a picture of a horse, and just went off another person's description. As do the poor cows of Tamriel. The cats are probably not right either, but IMO they're much more realistic.
