Argonian is a good choice for tanks, no need to change races. I prefer all heavy armor. Your stats with food seem right. I go a little heavier on the magicka side, but I tend to use more magicka.

To add on to what @GarfieId said, Drake's + Yolna is one of the best setups for main tanking trials. Alkosh weapons & jewelry work well with a group that can use synergies. If you want the undaunted passive, you can go with Alkosh belt and light epaulets. But Alkosh is somewhat out of favor. Not saying its not used by tanks, but Powerful Assault, Saxheel Champion, and Crimson Oath help the group DDs more than the damage Alkosh puts out. But Alkosh + Ebon + Lord Warden is a very safe setup. I would try to run a medium head if you are going with the Undaunted passive

As for monster sets, Symphony and Bloodspawn are solid. I also like Baron Zaudrus to build ulti (especially with DK tanks), Encratis with a mag-heavy DD group, or Earthgore if I am running a Warden tank or the blood altar and the group is going to take a lot of damage. If you run blood altar consistently, Lady Thorn is a nice net if you don't have another source of Major Maim (i.e. Frost Clench). If you want to continue running Alkosh, its a good way to self-synergize.

Lighting staves are preferred, but frost are still good, especially if you want to run Frost Clench

Is this change something that came with the recent update?

I had been following what I thought was gospel on the 5-1-1 setup, but tbh, I never challenged or looked into it.

I am at work but I think with Sugar Skulls he is around 36k health and like 22k magic and 27kish stamina.

Is there any specific gear I should get that would be better for doing vet dungeons and norm trials? I can craft anything btw, and I have no issues farming different ebony pieces for transmuting and don't mind spending transmute crystals creating something different.

Should I use a different monster set? Should I go full heavy? Alkosh I only have in those pieces so I can't reconstruct anything new, but I can redo what I have if needed. I also have a few free race changes I could use if Argonian is not up to par.

The 'Meta' for four man content would be Turning tide, spauler of ruin, one maga incarnate and Master arcitechet if we are talking single target boss DPS, assuming you have a healer in PA(powerful assault) and SPC(spell power cure)/OLO or three dps. But any combination of Yolnakrin, sax champion, PA, Master arcitecht( or War machine same thing) and turning tide is great for boss fights. Engine guardian, Magma incarnate, encratis , lord warden are all nice monster sets situationally, Spaulder of ruin is always a good mythic if u can sustain it. In trash set ups, if you have a healer with PA and SPC or OLO then something like Drakes rush with void bash front bar, spaulder of ruin, one magma, alkosh or crimson oath. If you have 3 dps then something like PA or OLO either together or one of them with Crimson oath is great too. Generally you'd always go infused crusher frost staff back bar, and front bar void bash sword and board for trash, and Masters perfected for boss fights. But if your a tank, and you are in some combination of all the listed sets you will be sweet as. Generally ebon isn't used these days because health is higher so its buff is proportionally weaker. You can also tank this patch in a few amour combinations, for example with changes to medium passives, its viable to go five medium two heavy, 5 heavy two medium, 7 heavy, 5-1-1. up to you, just depends on what you are doing.

In a trial setting, if you have encratis, Yolnakrin and Worm cult that's a super good staple to do anything. Turning tide, Sax champion and PA are also great in trials and crimson oath if there are lots of stamina dps.

Something to note for DK tanking specifically this patch, jewellery enchants will likely be two mag recovery one reduced magic cost, or block. Reason being, higher mag recovery more mag skill casts, and the reduced cost will bring Cinder storm, which is a ground based heal cost down to about 70 mag per second which is basically free but you can spam cast it from under block at 70 mag a cast and it will give you 990 stam back from your passives so you can hold block spam a heal at your feet and never run out of stam. Argnian Tank always great. Also because of this Stam spam trick you can do with dk I would recommend not getting the ice staff passive that makes blocking on the staff cost mag, because that way while you block on the staff your mag regens and you have almost infinite stam anyway
