I've now unlocked my first companion for my home. Is there a way to edit or change the outfit once placed in the house?

No all you can do is set a path for them to follow if you wish.

Each companion has two quests that unlock once you have a certain amount of rapport with them. Once you do both quests you can then place them in your house as guests.

You can speak to them too. When you try speak to Mirri she mostly says, ...

Hopefully they will do a QOL later where the companion can at least show the outfit that is configured for them. I get the costumes maybe being tricky because it can vary from alt to alt, but the outfit seems to be persistent across chars, so that's what I expected to see. Instead I got this weird outfit she wasn't even wearing when I first met her.

The costume she’s wearing is Arvel’s Ashland Attire, which fits with her love of Ashlander relics. If you’ve never seen the name of the outfit or seen it on NPCs in game, the connection might not be apparent, but the flavor text from the costume refers specifically to the designer making it to fit the aesthetic of Vvardenfell. It definitely seems that the choice of costume is meant to be reflective of Mirri’s character.
