Fully ranked Legerdemain, Thieves' and Brotherhood skill lines definitely make a difference.

Believe me, 25k a night is not something that will concern them in the slightest, it is basically chump change. Many folks make 60k+ gold in 30 min just doing daily craft writs, never mind the other 200k+ worth of rewards you can milk from them as well if you sell them. During the Explorers event last week, I was getting 120K every morning while on my first cup of coffee.
If anything, it sounds like this pickpocket slottable needs a major buff to bring it in line with other activities. Does it increase (like quadruple at least) the chances of pickpocketing motifs/rare recipes? If not that would be a great place to start.

I bet most people kick around with less than 500k.

Out of all the topics and scandals and disappointments about the Champion System revamp, there's at least one thing I'm quite happy about from it. The Passive that increases the quality of items pickpocketed from NPCs. Shortly after CP2.0 went Live I slot that Passive and took my Nightblade into an almost nightly routine through Anvil Castle. When I started I was still reeling from a massive shopping spree I had done which dropped me down 700,000g, and a player like me, who doesn't farm, doesn't play the market, and isn't in a Trade Guild. It's pretty hard for me to gain decent amounts of gold, so that spree hit me pretty hard, especially since before it I was sitting pretty at just over 2 million banked for the first time.
As often as I could, even on work nights, I'd log in and do my Anvil run, Fence, and log off to let my bounty dry out for the following night, and finally a couple days ago I realized. I bled those Pirates dry of 900,000g worth of stuff, getting my bank back over 2 million. Each pickpocket run would average me about 25,000g a night, depending on how many blues RNG gave me. I've been very happy with this new passive as this is really the only simple way available to me to make money in-game. (the irony of me playing a Khajiit making gold off stealing is not lost...)
At least with this, I'm thankful for the new Champion system. It's helped me get just a little bit more wealthy, and I'm very happy to be back over 2 million gold again.
If anyone is always having trouble getting enough gold to buy things, I highly recommend you invest in that passive and just start pickpocketing. It's VERY lucrative. Don't forget to start the Dark Brotherhood questline to get the Blade of Woe and remember the routine. Pick, Pick, Stab. Also if you feel bad for earning gold this way, do it to NPCs who are baddies. This is why I always run through Anvil Castle. Nothing but Pirates. They deserve what they get.

The disparity from richest to poorest is wildly massive. Those focused on making gold and have for a long time easily have broken into hundreds of millions, though I would also guess the average person is as you said less than 500k.
2 million, 10 million, 100 million...at a certain point it becomes meaningless how much you have.
I've managed to experience the wonders of a Trade Guild with a spot in Mournhold once. After asking the Guild what usually sells easy (Mats and other things) I listed some stacks of Potion ingredients I never use myself as well as loose style pages and maybe some other things, and after like, three days I made several hundred thousand. My problem though is I ran out of things to sell and I wasn't doing the farming to restock quickly.
