I've been playing regularly lately, but my track record says every once in a while. It's usually play regularly for a couple weeks, then stop playing for a month or two, and then repeat based on the current reward cycle, crown shop, new releases, and patches. This is due to burnout, since I've been playing regularly since beta, so after a few years it's hard to play for long periods of time. Used to be I only had 1 character I played, since I didn't have any build that worked for me in any of the other classes aside from my main, but recently I made 3 extra builds that I like so I have 4 characters to play, 3 of them I play a lot, but eventually it'll slow down too and I'll take another break I'm sure.
Depends on your definition of playing, but I log in everyday.
During the work week I log in while drinking my morning coffee. I'll do writs on 2 or 3 characters and pick up the daily freebies like the Southern Elsweyr coffer and the benefactor satchel. Some days I have time to clear a couple surveys or list some items on traders, but not always.
Weekend days I'll play at least a couple hours and that's when I get to actually play and enjoy content.
For me it's very variable. Sometimes I don't log in at all for 2 weeks (not entirely by choice, often that's because I'm not at home and have no access to my computer). Other times I'll play an hour or two every day. Most weeks fall somewhere in between. It depends on what's going on in ESO and in the rest of my life.
For example during the anniversary festival I was playing ESO more than anything else, and since then I've stepped back from it a bit because I got a few new games I want to play so I've been spending my time on them instead. At some point I'll go back to focusing on ESO again, or split my time more evenly between that and other things. It all depends on what I feel like doing at the time.
I try to log in at least briefly every day I'm at home, but I don't count it as playing if all I do is collect the login reward, collect mail and drop a couple of things into the guild trader to replace stuff that's sold.

I’m a binge player...namely, I’ll play a game almost every day for weeks, then switch to another game (especially a newly released game) and play that almost every day for weeks.

It depends what you mean by playing. I shuffle some sets around for about an hour in my inventory to see if it's better or worse. I play 2-3 BGs, get no results compared to the meta. I log off for about a month or more waiting to for the major patch changes. Rinse repeat.
I play in bursts - when I have the time it can be a couple of days in a row, but it can happen as well, that I'm not touching the game for a week or even several weeks. My trading guilds allow for 4-week-advance payment, so I can stay in those, even when I'm away for a while - and can continue where I left off when I'm back - without to be kicked out, what is really nice and suits my gaming pattern. This said, I tend to play something pretty much every day, but I have too many in parallel and that is causing these gaps and playing games in bursts.
