My bet is on the textures and the meshes of the original models. I am confident, that the engine probably can not animate properly with those pet meshes. After all a combat pet and the non combat pets have different animation patterns. There probably would be distortions and weird textures.
Plus, if you think about the Indriks. They are reskinnable, so to say. But you cannot revert them. So there will probably be problems with the textures and swapping them out. After all the engine is pretty old by comparison. And summoning different pets everytime, might break the summoning skill es a result.

It doesn't take a lot of time or effort to import an existing model's texture map into an editing program and tint, lighten, darken, recolor or change contrast on it, or plop some stripes or spots or shading on a new layer on top of it. I don't think the skins are the problem. It could even be done to be more like dyeing an outfit, where you are just staining a base layer a new color. Imagine color-coordinated daedra to go with your theme!
