I was wondering the same, why would someone destroy a stack of Malachite thats worth 30,000 gold or more?

Not a stack. A single mat obviously.
Not everyone has ESO+ so everytime you get one of those old golden items you have to DESTROY them or else you have a messy inventory

But if you don't have a craft bag, that still means keeping them in your inventory until you can get to a bank.
When space is limited and you need to loot something else, deleting them is the only option.
Given most other mats don't behave this way, this is kind of strange
