If the in game gold was a real life currency, what do you think it would be compared to USD?

Not sure you can make that comparison. I bought a home for 60,000 gold and I am thinking the price in dollars would be much much more than that.
A meal that doesn't look to be anything special costs over 100 gold from vendors. It is much less from players though so that makes food more reasonable. Similar meal out and about in our world probably around fifteen dollars.
A low quality sword in our world maybe $200-300. In the game about 1300 gold at a vendor.
and then the parrot said, "must be the water mines green too."

Lol. You can find the real exchange rate from gold sellers.

The gold for Crowns exchange rate might also give you some idea, although some are not bought outright but are from ESO+ and otherwise I would assume that the person selling the Crowns bought the largest pack while they were on sale.

One really cannot equate an in game currency with the real world.

Game gold and especially game prices can not be compared to real life currencies, for many reasons.
You can buy gold for about 0.0028 Euro per 1000 gold as a lowest price at the moment, depending on seller. Prices are quite volatile. I don't know if that's allowed btw.
