If I remember correctly, the cap is 200% movement speed. So basically you can double your movement speed which means you can get 100% more speed. So you're still 8% shy of the cap if you have +92% to your movement speed.

But regarding my build specifically, are these calculations correct or am i missing something?

1. 21% ( 3x swift)
2. 15% ( wild hunt ring )
3. 30% ( Major expedition , bow )
4. 21% ( medium armor )
5. 10% (steed mondus)

97% total extra speed. This sounds correct? I dont want to be wasting traits if its not necessary.

Medium armor bonus applies only to your sprint speed. So if you are just running and not sprinting your speed bonus should be:
21% (3x swift)
15% (wild hunt ring)
30% (majo exp. bow roll)
10% (bosmer roll)
10% (steed)
= 86%

If you are sprinting, add:
40% (sprint speed)
21% (7x medium)
= 147%
you are 47% over sprint cap, but in this case you don't need to dodgeroll to get max movement speed
