TBH, Questing is the most enjoyable way to gain skill points. Sure, the skyshard farm can be a bit quicker, but that is more a grind.

Same here. My characters generally follow different paths through the game, but they all follow the same basis of solo/co-operative overland questing including dolmens and delves etc, and without any farming of any kind. They'll generally only do a dolmen or delve once, unless there's a quest or event involved.
I'm never, in any MMO, remotely interested in any kind of "endgame". I generally find the first third of the leveling process the most fun as I'm really developing the character, followed by the second third. The final third in any MMO I generally find to be a rather tedious and repetitive grind, and altogether more of a chore.
