Better yet, if someone can say what consumables/buffs can be used at once, it would be greatly appreciated. I keep wasting cool stuff trying to figure it out.
Edit: I just grabbed Boon: The Lady. Did not cancel out XP buff. From what I can tell, potions cancel out food & drink, food & drink cancel out potions.

You can only have one Standing Stone bonus, and you can swap between them whenever you want.
So, actual consumables:
XP Pots and scrolls occupy one slot.
Instant Research scrolls do not occupy any slots. They simply take effect.
Food and Drinks occupy a slot. Consuming a food or drink buff will remove the last one you recieved.
Potions occupy their own slot (I think). This is a little more complicated, but Potions do share a 45s cooldown, which means you, effectively, cannot stack their buffs. Though it is possible to reduce the cooldown with enchantments, so at that point it might be possible to verify if their buffs overlap. However, most lingering potion buffs occur as named Major/Minor buffs (this will be important in a moment.)
Event based XP accelerators occupy a slot. These do stack with XP Pots and scrolls. I'm unsure if the AP accelerator from Midyear Mayhem stacks or replaces XP doublers, though that's a very peculiar interaction.
Now, here's the very important one that's completely unrelated to what you asked:
Named Major and Minor buffs do not stack with themselves. For example, if you're getting Major Brutality from your armor, and from a weapon skill, you will only benefit from that buff once. If you have Major Brutality from your weapon skill and Minor Brutality from your potion (or any other source) those will stack. So, using Brutality as an example, You can have one instance of Major Brutality, and one instance of Minor Brutality, but you cannot have two instances of Major Brutality. This is true for every buff or debuff with the term Major or Minor in its name. This also does affect potions and poisons. So, if a potion gives you Major Endurance and you use another potion to get that buff again, it will refresh.
That's all the situations I can think of regarding consumables replacing each other, though I might be forgetting a few.
