Thanks for all your feedback, guys. I'm now picking between StamDen and StamDK, leaning more towards the latter as I like the fire theme more, than nature theme. Although, looking at a skillset and passives, Stamden seems so well rounded and also looks to be a good class for bow/bow, which I'd probably would want to try.

If you're going to tank you have to be able to taunt to get bosses to focus on you and there are only four taunts in the game, three of which are accessible and two of which are useful. 1H&S has one of the two good ones, Puncture > Pierce Armour. The Undaunted line has Inner Fire > Inner Beast. Heavy attacks with Ice Staves also taunt but they're not one of the two good options. Strictly speaking there's a fourth taunt but you need five pieces of the Tormentor set which you only get from the Banished Cells dungeon so as a newbie you can forget about that one for a while.

Taunting and applying Major Fracture via Pierce Armor are big deals for stamTanks. Plus shield blocking is really good. You might be able to make bow work on the back bar but primarily 1H&S has been the stamTank's fundamental line for good reasons.
    PC NA, PC EU

"Instead of taking the best of the dolmens (predictable rotation), the best of the geysers (scalability based on number of players), and the best of the dragons (map location and health indicators) and adding them together to make a fun and dynamic world event scenario, they gave us....... harrowstorms." https://forums.elderscrollsonline.com/en/discussion/comment/6850523/#Comment_6850523

Stam builds are boring and generic. Most of them use almost same rotation and sets. I would advice magsorc with lighting staff with rotation based on heavy attacks like EasySorc by Xynode. Good shields, decent AoE damage, easy rotation and infinite sustain. It will carry you through 95% content, farm gear and let you learn mechanics until you will master weaving and such...

Stam DK is about poison, not fire, with minor exceptions.
    Magicka DK is about fire.

After Scalebreaker, magicka builds are also boring and generic, mostly using the same sets and non-class abilities :(

I see what you dot there. Still Magicka Builds offer some more variability since there are more class unique magicka skills.
