Since we're talking about beards, I'd actually like it if they were the same colour as the hair. I mean, top of the head hair. I mean facial hair and top of the head hair should be the same colour. Your beard should be the same colour as your hair.
Dammit, why does the english language use the same word for different things ? In my main language, we have a word for the hair that grows on your head, a word for the beard, and a word for the rest of the body hair, sometimes qualified with an adjective to explicitely mention a given body part. You guys use "hair" way too indiscriminately ^^'

There should certainly be more beard choice. The Boars nest is not long enough to reflect my own, although I sometimes opt for this due to clipping issues (no pun intended) with my outfit. For my bears I tend to use a lovely longer, nord style plaited beard that I got from a crown crate ages ago.
Regarding winter wear, there are actually quite a few options, but you need to acquire them, which may require a purchase via the crown store. Frostcaster is only available during the Winter event each year, as far as I am aware.
Check these out, they have fur lined/trimmed armour for warmth. There may be others but this is off the top of my head...

I've seen those sets, yes. The thing is, most of them have one problem or another that makes them unappealing.
The Nord armour is very open at the neck, and most of it has short sleeves.
The Orc armour is not bad, but is also pretty open at the neck, and is very clearly armour.
The Skinchanger set is pretty good, but has that big plate in the middle of the chest, which is kind of ugly.
Frostcaster looks good, but I can't get it.
I've actually been considering getting the Silver Dawn motif, but it's so absurdly expensive, I'm not paying $50 for it.
Same for the Huntsmen set.
But, who knows what may come along. I'd thought perhaps a costume might fit the bill. We'll see what, if anything, they do.
