nope I'm serious - I've been saving a hell of a long time for these components and I do not want to get it wrong. If the ASUS was the same size as the samsung it would be a no brainer.
Really what I'm trying to weigh up is - is reducing the size of the monitor for the extra tech really going to be noticable or worth it and is the asus $1000 better.
P.S - I worked really hard to get where I am in my career and be able to splurge from time to time and I'm not sure what my budget is or is not is entirely relevent

If possible make sure that you can test monitor at home as lightning conditions and angle how image look vs in a shop. Check for what range of brightness you can get as during night and day brightness might need to be adjusted so you can see dark scenes. Colour is something that need to be calibrated and can make a lot of difference between display to display. We also have different sensitivity for how out eyes can see different colours and grey scales, so that might also be something that you need to test in person and not just read reviews on.
ASUS PG35VQ seem to be over prices compared to earlier version PG348Q which is 34 inch display with 100 Hz (OC). Checking on net there is actually also 100 Hz version of this SKU which cost much the same as the older PG348Q. Save your money and don't buy that 200 Hz version for around $ 3500 when there is a PG349Q for around 1/3 in price.
What kind of video card do you have? Is it powerful enough to drive a display at 200 Hz? Does it have G-sync (Nvidia tech) or Freesync?
Anyway that 49 inch screen would need a very firm foot to not wobble from displays own weight. Take that also in consideration or your might want to mount display on something more steady then what is delivered from Samsung.
As for only playing ESO with those displays, you don't need 200 Hz as this game really have trouble to even stay around 100 FPS (Hz).

In need of a new monitor as well.
My rig is 4k ready. Nividia here so wanting G-Sync. Not sure if I should go for a higher refresh rate or higher resolution and...I am cheap. Hoping to spend 1K or less.

Yep. All Pascal and later cards support it as of last year. I run Freesync on my GTX 1080.
