But what drives most players away aren't the similar models but the combat system changes, the overwhelming/annoying lag and the degrading point where the performance is right now.
Touching animation might run into balance issues. What if the khajit light attack animation ends up being faster than other races. Or a bug the causes argonians animations to finish channelling faster. Atleast with universal animations, everyone gets to reap the benefits of animation cancelling, with used to be a bug, but no longer considered one.

ZoS can do what ever they put their minds to of they wanted. They could break the game down to its core and start over.

I don't think they need to shut down the game but it would be wise to place the next content update on hold until the performance issues have been addressed.
Regarding the char models:
- I'd like that the Argonians and the Khajiit could be less humanized.
- I'd like unique animations per race.

As much as I read and reread people ripping ZoS apart about performance, lag, stability, balance and every other thing out there, they may as well lock it down and overhaul or shut the game down for good.
I personally enjoy the game and want to see it succeed, but if the majority of players feel it's garbage then overhaul or throw in the towel. Come out with ESO 2.

The problem is that even though a lot of players can't stand the performance issues, they still play and some even subscribe. There's no need for ZOS to improve anything as long as the little effort that they invest still makes some money.

Then maybe they need to just shut the game down for several months and do a total overhaul.
Toss out the build your class system and give us set in stone classes.
Toss out the crown store and reapply the $14.99 monthly sub. For a steady stream of money to pay their work force which never gets credit for anything they do.
Get rid of Cyrodils massive zone and break it down into instanced segments of 10-10-10 max.
Break down the mega server into smaller servers and cap population. Better stability.
Revamp Trials and Vet dungeons.
Remove Champion Points.
Revamp crafting system
Revamp questing.
Revamp leveling.
And finally update the character models.
Better??

Basically close the game and release a totally new one

I will only agree to that to a certain extent. I don't for one second believe the staff are in it for money outside of having lives outside of work just like everyone one of us. If anyone it's the CEOs. The big dogs of the company. Which btw its their job to make money.
I think if the CEOs would back off and let the staff use the accumulated funds, they could fix these issues or stabilize the game .
As for the "keep throwing money and subing" thing, I will never agree to that. It takes money to keep this game going. Are you going to put 40+hrs in a week at your job for a couple peanuts and a soda?
It's IMPOSSIBLE to run a company without revenue. Insurance on buildings, equipment, staff, taxes, payroll, retirement, maintenance of grounds and property. I don't play that "they just want to make money" game. At least not where the actual workforce is concerned.
Even free organizations have to have a source of revenue to push forward.

And I'm sure that's how most players that complain see things. Hardly anyone ever hates the devs of a game, the hate is usually addressed at the upper management, and rightly so as those are the people that should make funds available to improve a game.
Regarding the subscription; I disagree for ESO. That game has so many income streams, from the purchase of the game, to cash shop cosmetics, RNG loot boxes and eventually a subscription. I was happy with having my sub from day one for two years. And then all that Crown Store BS started. Right now I am happily paying my FFXIV sub because I'm not welcomed with time limited loot boxes when I log into the game. Yes it takes money to run a game, but other games (e.g FFXIV, Division 2) are doing fine without milking every single cent from their community.
Anyway, they'll never upgrade the current models of the game
