May want to give Red Dead Redemption 2 a shot.
Single player and the online portion are great with side activities such as fishing, hunting, poker, and soon roles such as trader & collector (relic hunter).
It would be fun if ESO taverns had some sort of mini games to play.

At 48, I am pretty sure I meet the older than average criteria. For me, this game can be pretty darn casual the way it is. Questing for example can be done as fast or as slow as you like. Personally I like to read along with the voice actors and take my time with the quests.
As for fishing. There are many ways it can be improved. One way for example, is to add a daily fishing quest. Catch X amount of Z type of fish at Y location.
