If that's the case a set like fury would seem to work very well with Stam necro
(I'm also ignoring Goliath bash build...)
Personally I'd run Bone Pirate + plague Dr. And hagravens tonic (the 604 Regen drink)
Monster set of choice.
But a more conventional Stam build is probably what you're looking for
I can offer some insight based on what not to do. I wasn’t sure what would work at 50, and this is my first attempt at a stam build. I tried battlefield acrobat and plague doctor at first. Result is... meh. Here’s my build:

For skills that I really like as stam:
Empowering grasp - even though it does no damage it’s a great snare and immobilization to avoid being kited
Mortal coil - stamina return is nice
Deaden pain - more ult is good, best used on front bar but it’s crowded
Mender guardian thing - 10% less damage is good.
My thinking on sets:
Plague doctor - it’s overkill. What I should have done is just used a couple of health lines. Aim for 30k health I think, and use attribute points for health if you’re low
Battlefield acrobat - high costs so I chose it, plus reduced the cost of ultimates. Missing damage stats.
I’m thinking of adding Viper and? Think more bleeds and tanky would be best.
While leveling I think I did clever alchemist and Sloads and did well.
