Welcome to the difference between a stationary target that doesn't fight back and the real virtual world where *** happens.
It's even more fun for us who like to solo group content, now all the sudden you also have to block, dodge, heal, buff, debuff, shield, do damage and stay out of red all by yourself.
Dummies are fine to practice and get a basic feel for a setup and rotation but i have never ever soloed a dungeon with anything close to a perfect rotation.
To me, that's part of the fun, actually ...

I've found as my dummy parses get better, I tend to actually do more dps on single target when soloing dungeons, but if the boss has adds it drops quickly.
Key is to be disciplined in your rotation, which is what I use the practice dummies for.

even on consoles dummys tell you your DPS, in the chat.
To OP: instead of aiming for numbers on the dummy, practice your rotation on the dummy. As fights might differ, but rotation stays the same.

@Kikke
I didn't know about it in chat... I can't get my chat to work consistently, in fact right now it won't even let me turn the options on in settings. Is xb1 different than PS4?

Yeah I realized I had a problem when I parse 30k on dummy, but on last boss of BC2 I was struggling to stay above 10k...
