I'm glad they're adding at least a few different breeds of Khajiits, as it is essential in their lore. Could do for some very interesting reading concerning lunar phases and whatnot.
As you say though, I am quite surprised at the size of the Cathay-raht.3 -

Some dialogue was recently discovered on the PTS (and it isn't in the MQ so it's free to share) that confirms the form of all of the Khajiit shown in this image (including confirming the player-character/standard Khajiit as Cathay-raht - yeah, not what I was expecting either, but good to have it flat-out confirmed)
So from left to right, it's: Alfiq, Pahmar-raht (like the TES: Legends interpretation instead of the Jobasha one), Dagi-raht, Cathay-raht, Senche-raht, Cathay-raht, Cathay-raht.
It's possible some of the shorter Cathay-raht are Cathays but with how inconsistent the usage of the -raht and non-raht terms are (sometimes the non-raht term is used as a generalization based on context) and without further direct sources, it's hard to tell.

✭✭✭✭✭I'm so glad they're adding different furstocks! That was one of my big hopes and big worries when Elsweyr was announced, since every other TES game has used just 1 model for all khajiit. I was worried they'd do the same here, or go for some kind of easy compromise like using the existing house cat and tiger models for alfiq and senche and calling it a day.
This makes me more exited to explore Elsweyr.

Also there's statue furnishings you can get for your house. There's 5 of them, and all in the picture below, side by side. According to the furniture names we know the furstock the statue is depicting, too, so from left to right, is a Cathay-raht, Ohmes-raht, Suthay, Tojay, and Tojay-raht.
Here's some close up picture of the Suthay, notice the digitigrade legs, just like the Suthay-raht from TES3 Morrowind:

And since the Tojay-raht is digitigrade, I'm guessing the Tojay is too, but it's hard to tell:

Spotting ohmes could be quite tricky, since they apparently look just like bosmer and in ESO bosmer can have painted or tattooed faces (which is what ohmes would do to distinguish themselves from bosmer). It will probably be a matter of finding someone who looks like a bosmer and talks like a khajiit, or explicitly says they're ohmes.

Ohmes-raht is an re-skinned bosmer with an tail.

No Ohmes or Ohmes-raht NPCs sadly, but there is a statue of an Ohmes-raht that you can get as a furnishing.
And there's also datamined face and body paint called "Tenmar Leopard Face/Body Marks" which look like they could be good for making Ohmes characters. Perhaps they might show up on NPC's in future Elsweyr zones, if they include Ohmes and Ohmes-raht NPCs there.
