The fun thing abpout ESO is... any class can do well as stam build, some perform better then others, depending on playstyle. It you want to be sneaky and murdery, nightblades are obviously great thanks to their shadow-sneaky and assassinationary skill lines. Wardens and templars have heals, and otherwise wuite nice stamina morph options, while dragonknights have a great selfheal for "oh, crud" situations, and decent skills to work well for either tanking or dpsing. Sorcs in stamina look a little bit lacking at first, but are more effective then they might seem in a dps role.
In the end... Pick which flavor makes you most happy playing! Think about what you want to play as. If you imagine a nature-themed character, go warden, a blood-drenched assassin would feel right for nightblade, a holy warrior obviously fits templar, a spellsword theme is good with sorceror, and if dragons and poisonous flames are your thing, DK, obviously.
If you want to hit hard, and a lot, you might want to go stamina DPS, medium armor for better stamina regen and critical hittings.
If you want to take a hit, you may prefer heavy armor for all the armorings, tho that means you will have to mix in a lot of heavy attacks for resource management.
(You can level both skill lines and switch gear as you like of course, there are more then enough skill points in the game for that)
As for weapons... 2H is a great all-rounder that has -everything-, DW good for burst damage but lacks a gap closer so more something for the "sneak up and then murder them" playstyle, 1H&S is the only choice for serious tankings, and bow obviously for touching your enemies at range; easy enough. Pick which one suits your preferred playstyle for main and backup.
I know you're a sorc main so try stamsorc. I have loads of fun with mine.

I know wardens are ones that have been said to be rather good as stamina builds though not very good at a magicka role from what I've read from other players.
