Mark target ( Major Fracture) + crippling crasp ( Snares) ,Trick is to put 2 lethal arrows ( Major defile ) back to back ( Or poison injection + lethal arrow if master bow) more healing negation if poison procs and then immediately cloak. At-least one of your lethal arrow will always crit ( sometimes both crits ) + sneak damage also stack. By this time your target should be under 50 percent health. Then poison injection + execute , use sheer venom set + any set of your choice. Normally I swap sets/poisons based on target I choose while in stealth.
Sheer-venom + poison injection is another juicy combination , because execute will always proc if 6 second gap. Please try to get master bow and feel free to use your own creativity.

On a serious note, depends how you want to play that stamblade. If you're planning a frontline brawler, Nord/Orc are your best. Followed by Khajiit or Imperial as 2nd best picks.
For a ganker Bosmer/Khajiit/Redguard all do extremely well. Although Redguard has a slightly larger detection range.
Bosmer probably gets the most out of long range/snipe ganking due to having extremely high sustain and good amount of stamina.
Speaking of PvE, in my humble opinion, nothing beats a khajiit>redguard/bosmer.
The best for immersion would probably be a Khajiit though
