In pvp, this is a build I'm trying out and having a lot of fun with.

6 heavy 1 medium belt, all 7 pieces well fitted 5x impregnable, 5x weapons/jewelry Seventh Legion Brute, 2x troll king. Stam sorc orc.

DW front bar with VMA 2h back bar or 2h front bar with Master DW back bar.

Steed mundus, 3x Swift gold jewelry for +18% movement speed.

The point of this build for me was to have high speed in heavy armor with high surviveabilty and synergy through troll king and health recovery. Sustain is fine for stam sorc with Dark Deal and heavy armor giving back mag/sta, use a heavy attack every once and awhile. You're sustain tool as templar is very strong as well. Sprint/Dodge roll cost is awesome in heavy armor. Mitigation is high with major ward/resolve.

Health recovery will go insanely high with all the modifers, for sorc's you can get +20% from class, +20% from orc, +24% from 6 heavy, + 20% from a weapon crit pots (major savagery/stam recov/health recov).

This build is used for BG's. Not sure how it is on other classes or in a CP environment, but I'm close to speed cap with no major expedition. Think I'm at 190% movement speed constantly when sprinting and sprinting costs very little. Templar doesn't have minor expedition, so if you plan on using major expedtion via something like quick cloak, use only 1-2x swift jewelry or none at all. Damage is good with 7th legion brute, you could swap it out for something else, but I really like the health recov + 500 weapon dmg and heal proc for added defence.

For pve. Relequen body + veiled heritance/advancing yokeda weapons/jewelry + stormfist/velidreth/selenes monster set, all divines, lover mundus for penetration. Pve is really easy to build for, check out alcast's website linked in prev comment. Weapon bars are practically the same across all stam classes.

Stamplar can use ravager as a set instead of veiled/advancing yokeda, very strong.

Stamdk can use venomous claw as your spamable, will save you a ton of stamina to use and it gives the same damage as using that + an actual spammable. (For pve)
