If you have mobility issues, I would be hard pressed to recommend any melee build. They typically require faster reactions to play effectively. If you are avoiding melee, you should be avoiding basically any stamina build, which should play into your dark elf wheelhouse nicely. Dark elves appear to be a bit of a hybrid race as you get both resources, but they really are a magic race, and arguably the best one for damage with most classes. Most magic classes do a lot of fire damage.

Next you really need to decide what you want to do. If you arent trying to push score as a trial DPS, than really anything is viable. Ill talk about a few obvious choices.

Magic NB: You already have a NB it seems. You mentioned melee, but really a magic NB in PVE should be played at range. At the extreme end of things, NB is one of the toughest and most demanding rotations in the game, but that said, There is no reason you need to play one that way. You can certainly master a simplified version of NB, that will be very effective. It will still likely be the most demanding of three I mention, however. You have skills for just about anything, with great heals, damage, and mobility. NB is arguably absolutely the strongest class in the game unless you are specifically trying to be a tank or healer. They do have one of the highest skill thresholds, however. They are more dependent on a good light and animation canceling than anyone.

Magic Templar: The only drawback to the easy mode templar (lots of puncturing sweep for the self heals), is that it brings you into melee. That said, they do lots of damage while passively healing. For overland/questing, they are perhaps the easiest class to play. You can honestly beat the main quest with one skill (a lot of bots you see are actually magplars because of this reason). I think they have the easiest rotation of any spec at the extreme end of things as well. If you chose to abandon sweeps and play range (using the psijic skill as a spammable), you can do really high DPS with a very simply and circular rotation. In that context it is easier than mageblade or non pet sorc, and next patch, just might be in first place for damage out of the three.

Magic Sorc: Magic sorc can be played one of two ways. Pet or non pet. You dont see a lot of pet builds in end game trials if that is important to you. They are making some changes this patch which will help, but ultimately, they are more trouble than they are worth currently. Trial sorcs are typically back up healers (really there for the synergies) or range DPS, that are basically a poor mans magic nightbalde. Similar play style, with a slightly easier rotation and noticably less damage. I wouldnt suggest a non pet sorc based on your post. That said, a pet sorc might be just what you are after. You arent going to break DPS records, and wont beat a ranged Magplar or Mageblade, but you can do enough damage for really all PVE content. The rotation is very simple, very circular, and uses a lot of heavy attacks. If you have concerns about your ability to light weave effectively, pet sorc is certainly your best bet.

Well, you are debating the two obvious choices. No right answer here. My instinct is to recommend the pet sorc, but it really is a judgement call. Templar will probably feel a bit more powerful for the first 10-20 levels, but its really hard to judge a class until its fully leveled.

As to weaving, you can definitely look up some videos, but here is a quick rundown. Skills operate on what are known as global cooldowns. In other words, skills that are instant cast can not be cast faster than about once per second, even if you press the button faster than that. Your light attacks, (tapping the LMB or RT), arent subject to this rule. What that means is that you can "weave" light attacks in between your skills. Take a skill like force pulse on the destro line for example (or funnel health/suprise attack on your nightblade). In a ten second interval, you could cast it 10 times and no more (whether you press the button 10 times or 50 times in that interval). If you weave effectively, Light attack>skill, Light attack>skill, repeat, you can cast not only 10 skills in that interval, but also 10 light attacks as well. This obviously increases your damage per second by quite a bit. Good players put a light attack in between just about every skill because it boils down to essentially free damage. We call this weaving. Lot's of people like to complain about it (typically because he struggle to pull it off), but as the game is essentially designed around it, I dont think its going anywhere. If you just plan to play casually, it can be ignored for the most part. If you want to push DPS or be competitive in PVP, its a must.

As to the skill adviser, my opinon is that its frankly pretty useless. I think you are better off looking for a proven build on youtube or similar, and using that. The best thing that you can do when leveling is try to get all of your class skills, and as a magic character, your destruction and restoration skills, to at least morph level. Any thing that says "converts to stamina ability" is the wrong morph to choose. It is super cheap to respec your morphs, so dont over think it.

On a pet sorc, you want volatile Familiar, and twilight matriach most likely as your pets. Power surge is your main buff. Liquid Lighting is your main class AOE. Daedric prey is the best morph of daedric curse with pets. From the destruction line, you want elemental blockade, as its one of the hardest hitting AOE damage skills in the game. Those morphs should get you started at least. On a pet sorc, you want to play with a lighting staff. The heavy attacks (once you spend the skill points in the destruction passives), do a lot of aoe damage.

The basics of a pet sorc rotation is essentially: Liquid Lighting, Elemental Blockade, Volatile Familiar, Daedric Prey, Heavy attack, heavy attack, repeat. Follow that and you will be ahead of the game. Cast your matriarch if you need a burst heal, cast ward as a defensive measure, try to keep up power surge for the damage buff and self heal at all times. There are infinitely more complicated ways to play sorc, but this will get you through basically all content save a few vet trials. It will even get you through vet maelstrom arena no problem, once you get some CP under your belt.
