I like having a "Ring of Truth" in my inventory to use when text chatting. One never knows when a seemingly factual statement will need to be acknowledged.

I like sets that have a racial or lore connection of some kind, because I don't like running whatever the "best" set is on every single one of my diverse characters. Gives me a chance to sort of reinforce whatever my idea of that character's... character is meant to be. Definitely hurts my end-game viability sometimes, but hey, I dig it anyway.
Hunding's Rage, Amber Plasm, Senche's Bite, Ysgramor's Birthright, Seventh Legion Brute, Morkuldin, Queen's Elegance, Veiled Heritance, Pelinal's Aptitude, Kvatch Gladiator, Sload's Semblance, Green Pact, Spriggan's Thorns, Vampire Lord, etc. kind of lend themselves to one of the playable races or areas of lore, and part of me enjoys trying to find viable matchups for that where I can. It's an opportunity to weave a little flavor into my builds, if you will.
Too bad so many of these sort of sets underperform or are mismatched for the race/faction/whatever that would actually benefit most from them, though. Don't see many Bosmer tanks yet Green Pact is pretty decidedly a tank set, as an example. I don't want to run Advancing Yokeda and Arms of Relequin on my Khajiit stamBlade; seems like a combo more suited to a Redguard stamSorc... too bad mine's an Orc. Things like that. If you're using the best race for a role, and the best gear, you're more often than not going to be using "another race's" gear or whatever. Which is fine, but I wish more sets were on par with one another so we could mix and match and still end up in a comparable place performance-wise. End of rant.
Some sets just sound "cool" to whatever sensibilities I have rattling around in my brain, though; Burning Spellweave, Scathing Mage, Ashen Grip, Duneripper's Scales, Mechanical Acuity, Ebon Armory, Trial by Fire, Oblivion's Edge, Oblivion's Foe, Ironblood, Combat Physician, Ice Furnace, Silks of the Sun, Shacklebreaker, Livewire, War Maiden, Gryphon's Ferocity, War Machine, Twilight Remedy, Vicious Death, (and more) are a good handful of examples of set names that just sound like, "Neat, I wanna try that" regardless of their effects.
For me.. Overwhelming/Juliano and Necro/Juliano for my sorcs. For my stams, I like Sword-Singer/Mech A or SS/ShackleB for my 2H or Sword Dancer/Mech A for my DW. I actually don't prefer VO for non-trials.
For some reason, I love "Death's Wind." I see it either as a super fast rogue throwing a storm of blades or what happens after too much Taco Bell. Either or.
