I mean come to think of it why ARE unicorns even mythical? It's just a skinny Rhino / horse with a horn right. Yep giraffes exist and they a giant moose leopard with a 40foot neck. Way less realistic.
Because there is no narrativium in our reality. It doesn't have to make sense the way fictional worlds do, and frequently doesn't.

That Unicorn in Oblivion was far from Lore Friendly. It was put in the game for the same reasons Dire Wolves were in this one, a nod to pop culture. Both were a mistake in my opinion as neither animal type had any existence in the Lore of TES prior to that.

Created by Hircine in his plane of Oblivion, the Hunting Grounds, for one purpose; to be the main attraction for a hunt to honor him. He brought one to Tamriel. You were supposed to kill it, take the horn, and give it to Hircine. Iirc, once you did that, it didn't respawn.
So I guess if a single unicorn showed up as the sacrificial offering to Hircine it would be lore-friendly. It would function as a quest, just like the original did in Oblivion. [instanced to the player who had the quest]

There's at least one book in Daggerfall which mentions a unicorn: http://en.uesp.net/wiki/Lore:King_Edward
Apparently it is very unusual, even in what appears to be the early First Age. The kid who sees it is more surprised about that than a dragon which is later revealed to be Akatosh.
