A true problem it is. I bet you there's some Daedra laughing at our despair, having hexed our canopy beds, allowing us not to rest upon them. There's no other explanation to this conundrum.
I suppose you could set up a table or small bed inside the canopy bed, pick up the bed while in the editor, lay down on the table, and then hit F5 again to drop the bed back down over you, if you want to experience laying down in your canopy bed...?
It would be great to have an "activate bed to log out" interaction.
Your character would lie down for a sleep, and their next log-on would have them wake up and get out of bed. It couldn't replace that standard log out, as not all characters will have a bed, but since the game is recording where you are at log-out, this adds very little, and could make this the simple case that is the preferred one.
