Lately the prices of Materials have gone up in PC EU server.
So it is currently harder to find reasonable priced materials for fast mass daily crafting writs than before.

I can usually find what I'm looking for unless it's something very specific. What I do run into is finding the quantity of some things I may be looking for. Master enchanting writs, the 2 voucher ones are very useful for XP gains, but only in great numbers. If you can find a few at each store you check, it's worth it. If you only find one every couple of stores, you might as well just be spending that time farming the xp you would have gotten from that item.
As for hard to find single items, I occasionally go hunting for research items and they seem to be hard to find at larger stores, probably as they are a waste to post in those stores. I'm not paying over 1k for a research item and I sometimes have to check 5 - 10 places to find a research item for a reasonable price.
Specific food recipes are sometimes difficult to find. I used to sell all mine for a couple gold more than what I would get at a merchant, but recently, I have not been bothering.
I have no issues searching guild stores. If you're on PC, go get the addon Awesome Guild Store. You can do some pretty specific searches as shown in the screenshot below:
Equipment below CP160 and below level 50 especially. Whenever I've tried to buy it I can't find anything, or only the odd piece here and there. Whenever I've asked for a price check on anything below max level I get told it's 'trash' and not worth selling, but whenever I list it for sale it goes quite quickly so clearly the demand is there.
I suspect this is one of the downsides of the guild trader system - each person only has a limited number of spots and wants to make as much profit as possible, especially if they're in a trader guild where they have to earn enough to cover the cost of the trader. So they tend to only sell things which are very valuable. It's an ok system for the sellers (as long as people keep buying what they're selling) but it's really annoying if you want to buy low level or less valuable items. There's pretty much no point checking guild traders because they never have anything, so you're restricted to your own guilds.

Powdered Mother of Pearl that isn’t incredibly above MM value. Its very hard for me to find lately without having to use TTC and travel around hoping the pearl is still there.
I also find some crafting mats —Kresh, for example— to be in short supply and have to zone around looking for a few to do writs.

Honestly I had a very hard time finding certain blueprints that were not bloated up in price. I eventually just settled for summerset's far easier to find ones instead, looks better and beats the price by far.
Good deals because cancer flippers constantly scanning TTC will go in and relist items that are already going for too much based on other overpriced listings. That is a fundamental flaw in TTC and it ends up putting a lot of items at rediculous prices in guild stores where they just sit there for 30 days doing no good for anyone.
What bugs me is it’s generally cheaper to buy style items from the blacksmith/carpenter etc. When trying to purchase from a guild store they’re NOT in bundles (my main point for looking) and are mostly more expensive than the NPC.
Going through all my characters and try to find ok PvP gear for some. I got most I need stashed away but I might miss a few weapons. Probably some Werewolf Hide and Bloodthorn so should really chest farm in Glenumbra these days.
Otherwise I only missing a few BoP items from Fang Lair for now.
They just need to redo the entire thing. If you need to use mods then then they need to see why we are using the mods and fix it. Its as simple as that.

It's hard to find anything that isn't one of the default classifications they included in the gamepad UI, since that is what I use on PC.
I have no idea where to look for master writs or the pieces of runeboxes or surveys. Runeboxes themselves are not even easy to find.
Many things I end up just having no filter except the quality color I know they are and end up needing to search through everything because I'm unsure about the price even.
The trader system is insanely stupid in how it is organized and honestly needs to be a universal auction house available to everyone, guild or no guild.
Yes, they need to have a universal auction house because we all pretty much use either Master Mechant or Tamriel Trade Centre anyway to make it work like that. It's now a pointless restriction.
