The run of the mill Paladin look that people tend to go for involves:

Head: Order of the Hour, Imperial, or Breton Heavy, Any light hood.
Shoulders: Breton or Imperial
Chest: Imperial, Order of the Hour, Xivkyn, Breton
Hands: Dealer's choice
Waist: Any that matches well with Legs and chest
Legs: Skinchanger, Order of the Hour, Daedric
Feet: Dealer's choice

Cleric / Shaman
ESO Fashion is ultimately a good resource for Styles and Ideas though I generally just plug and play until I find a combination I like. Have an image in your mind about what you want and build towards that.

This is my Templar useing All AD style light armor - other than shoulders - Abah's watch- best ones i can find that makes it look hidden

Minus the helmet this is close to what I was looking for.

I think the Paladin look you have in mind is those traditional, bulky-armoured Knights with some kind of mystical look slapped on it.

Unfortunately, that may be impossible to achieve here in ESO where all the armours are generally not huge piece-by-piece and I entirely love that the game does not have those kind of armours like other games do. Max lvl players in those other games tend to look like they're giant brutes on steroids chewing on rocks and children as their favorite snack.

Some people just like to 'show-off' for no particular reason even if what they're saying is outstretched from the main topic. Too many people like that in this world today. *sigh*

Here's what I use

Forester hood
Breton heavy shoulders 4
Mercenary chest (with guild tabard)
Daggerfall Covenant heavy gauntlets
Breton light belt 4
Skinchanger heavy legs
Mercenary heavy feet

Celestial shield and DC sword.
