Potions used to stack to 200...but one Monday morning they didn't.

Potions are not poison. You use 1 potion every 45 seconds. You use 1 poison every few seconds.

What will the system crash if potions are stacked at 1k or something it doesnt for poisens lol

I would suggest it is odd, but not ridiculous. That is a little strong. Besides, that is not really what OP is talking about.
OP seems confused that he can see all of the crafted potions of the same type in his quick slot but they are still in 4 stacks in his inventory and also mistakenly compares stacking of crafted poisons to crafted positons which is not and should not be the same.

It doesn't "divide in inventory", it gives you a total elsewhere. The inventory stacks are the reality, the running total is just a handy reminder.
...and why are you carrying so many damn potions in the first place.
