So when did Morihaus visit Yokuda?

Our only in-game-recorded instance of Morihaus appearing was the slave rebellion with St. Alessia (1E 242). The Ra Gada didn't invade until some time later (1E 780), yet the new furnishing package has a 'Ra Gada Guardian Statue, Winged Bull' in it. Given that the Redguards conquered or fought almost everyone they came into contact with and about half of their society scorns Imperial culture, I find it unlikely they got that depiction from the Imperials. So when did Morihaus visit Yokuda, or otherwise make himself a prominent enough figure that they started putting statues of him in their tombs?

They also, presumably, had not seen a lion ibis either. Artistic license can and does occur in other cultures too. Or perhaps the man bull visited Yokuda for some left handed elf destruction too

The UESP says that's supposed to be Tava, though where they got that information from I'm uncertain.

Tava being the Yokudan version of Kynareth, yokudans also have war with sinistral elves of Yokuda
Tava is most famous for leading the Yokudans to the isle of Herne after the destruction of their homeland.
Seems Kyn like to save humans, as she saved them from ayleid and dragons, perhaps she saved them from sinistral elves as well? In such case her son Winged Bull become one of symbols but like other parts of Yokudan culture it was forgotten in years after RaGada invasion to Tamriel?

Maybe all we know about Yokuda is all biased information.

That the sinistral evles are so vicious that all these stories that were made up about the continent sinking so the humans that fled made sure their descendants do not go back there...and out of pride.

Maybe all the maps made are lies to secure that cover up....you never know....they can adapt the lore anyway they like.

If it did sink and was lost in the last time cycle, maybe some elves survived and are rebuilding the continent as they have powers over the sands and earth?

Hey when we get full expansions we might head to Yokuda...only time will tell. :)
