Which is best for pvp for a stamina sorc, Bow and one hand and shield, or One hand and shield and 2h?
Playing your character the way your character should play is all that matters. Play as well as you can but never betray the character. Doing so would make playing an mmoRPG pointless.

✭✭2h will give you better survivability and mobility. In addition, access to dmg.
Bow is only for a small part of Cyrodill gameplay which is ranged standoffs until the rush begins.
DW as well loses a lot of the assurance that SnB and 2h provide, or the ease at which SnB and 2h can apply presure on a target.
You can make bleed builds for fun but you will find after a bit that you arent actively using your weapons in your right and left hand.

Tankiest class in Cyrodiil.
