For me gotta be Khajiit. Their lore is so fascinating. If I understand it correctly the way Khajiit breeds works a humanoid Khajiit could easily have a sibling who is a small quadraped. Plus cat people are just awesome. They look beautiful. And they talk in third person. Unlike Miqo'ti on FFXIV they're actual cat people. Also that tail, gotta love a khajiit tail.
I also really enjoy argonian lore. From what I know they're literally the only race with absolutely no connection to men and mer. The hist trees are so fascinating.
Beyond that if I had to choose a man/mer race I liked the most is Dunmer. They have interesting lore. 3 of their own ascending to divinity? That's pretty cool. Though many of them are mean, xenophobic, and also they like to enslave other races namely Argonian and Khajiit.

I think you're exaggerrating a lot here. This game is about the player behind keyboard, not about few passives.

People will always try to min/max in games. I don't personally get it myself but /shrug.
