As above it depends on what you're doing.

Any class/race combination works to clear any content in the game. What changes is the speed and reliability based on on much you min/max your builds.

And how well your playstyle works with the specific quirks of the chosen Class/Race combo.

But I see no reason why Orc/DK wouldn't be perfectly viable.

My orc is a magicka warden ice tank and does perfectly fine. The thing to remember is

Warden - Defensive tank
DK - Offensive tank

It has a bonus to maximum health, stamina and healing received, so it's pretty good as tank. Not as good as Argonian or Imperial, but not far behind.

For tanking and healing, any race can work, even in the end-game. The only difference is the amount of effort you put into mastering your role.

DPS is the only role where racial passives make a measurable impact, which is stupid; tying stats to racial looks has no place in the competitive scene.

Viable? What do you mean viable? Play whatever you want, its viable if you play it well enough to be viable. The difference between BIS races and non-BIS is miniscule. If you want to play an orc vs. an imperial, have at it and make up the difference with skill instead. Class makes a much bigger difference than race, but even that can be overcome with skill.

I main a Nord Templar tank and do OK. Orc DK will be fine.

One of the best tanks I know plays an Orc DK. Race doesnt matter so much on a tank. Will you have an easier time of things as an Argonian or Imperial? Sure, but no content in this game requires tanks or healers to min/max their race, even if trying to push scores.

Any race can work as a tank without too much issue. Racial bonuses are fairly minor for tanking, the only really notable ones being Imperial Red Diamond and Argonian potion passives.

I tank on a Khajiit, and have done nearly all vTrials. Woeler, one of the best tanks in the game, also has a Khajiit main tank. Khajiit is one of the absolute worst races for tanking, and yet people can and do manage it.

It's more about your personal ability. Orc is fine.

Every race and class can make a viable tank, healer, or DPS.

Viable=/=optimal.

Hybrid dps is viable. Off-meta races are viable. Bow/bow builds are viable. stam healers are viable. Magicka sorc tanks are viable.

The above are very rarely optimal.

Red Diamond really doesn't make that much difference. The only time I even notice the passive is when I am getting zero external heals. I mean, yes I appreciate the passive being there, but the times I have been saved by it I can count on one hand.

That really only helps make my point. Racial passives barely impact tanking at all.

Any race is fine for tanking, even for end game vHM trials. Orc bonuses are definitely good for tanking and are not as far behind as some might think, everyone looks at argonian (and they are awesome, but I'm biased) b/c of the potion passive, but how often do you think my argonian is so out of all three resources that he actually benefits from that much when he drinks a tri-pot. 99% of the time it's like "overhealing" - looks good on paper, but not used. Max health in current tanking can be really valuable.
