Dunno. I seem to remember running all over Skyrim with Serana in tow with no one batting an eyelash at my obvious vampirism. Of course, it might have been that no one wants to look wrong at the fire-breathing, shout-you-to-pieces Dragonborn...
Flying Dragons are lore-friendly. What's also lore friendly is that the vast majority of the dragons are in hiding hoping that the Akaviri and the rest of the people don't kill them all.
As for rifles, I'm interested to see your sources for that, I can't find any.

Dragons dominated man and mer alike. They were superior in both magical abilities and pure strength and saw the mortal races as a means to an end.
Elder Scrolls is not as crazy as WoW. It is pretty tame in comparison.

That entire video is about how there are things in Elder Scrolls that could be the basis for someone in that universe eventually inventing guns. Not that guns are actually canon.
The closest thing in that video that could prove the point that guns are lore friendly is some scripts regarding "cannons" that never made it into the Redguard game. And a single "joke book" in Daggerfall that mentions cannons. Nothing in the video is concrete evidence that guns would actually make sense for an Elder Scrolls game. Only that the universe Elder Scrolls is set in has the capacity for guns to be a thing.
The guy even goes on to talk about how he doesnt want to see guns in Elder Scrolls because he doesnt think it would fit the setting. And I have to agree with him. Im certain that with all the lore that has been created for Elder Scrolls you could create an argument for just about anything being included in a ES game. That doesnt mean that it should be.
