Sorry to pry so much but I have 14 max level characters and only one Wood Elf Stamsorc. I'd personally would like to make the most informed decision if I can especially with 3500 crowns on the line.

I'd go Redguard because I am more worried about dying by running oos than not having enough healing or mobility. And depending on my build there might not be a big difference in damage anyway. People sleep on imperial. You get the damage boost same as redguard, but also health and a little healing. the redguard's sustain passives are wasted on a stam sorc because all you really need is dark deal and spell symmetry to sustain.
I feel like people like orc for stam sorcs mainly for one reason. If you can guess that reason then I'm probably right.
Although the speed from orcs in medium armor is insane and great for stam characters in general anyways. But don't be a fanboy. I mean I guess you could if you wanted to but come on man. Everytime I see an orc stam sorc and hear a familiar "HUUUUUUGGGHH" when they break free I chuckle to myself.1 -

For no cp, orc is the way to go. The added healing compensates for lack of cp, and bonus melee damage makes up for loss of max stats. Imperial was still good, but couldn't capitalize as much on the max stam bonus in no cp. Never tried redguard for no cp though.
In cp, I prefer imperial. Never have to put anything in health, and get that huge stam bonus. Redguard was nice for sustain, but always forced me to trade stam to reach an acceptable level of health. Orc is still a solid option here too.Xbox One NA

✭Orc would probably be your best bet. With Redguard a solid second. Orc mainly because you mentioned BGs so, capturing flag or ball objectives --- or just having a lot of speed to work with in general will go a very long way.
Redguard does net you more damage and sustain, but not the special movement speed stacking you'd get with Hurricane up + Orc passives. It's really noticable and really nice to press Hurricane and just run away like you're the Flash lol0 -

Extra health is always good and the extra damage.
The 20% health recovery stacks great with bound armaments(20% stam/health rec with the passives) for troll king since stam sorcs got *** healing.
And you dont really need all the sustain redguards give as you can just dark deal if all goes bad.0 -
