I want to know are all combos above worth playing? (that is, able to finish vet endgame content without being carried all the way)

That's ten characters. I say you have a lot of work ahead of you. :P

Bosmer stamina healer is interesting. Its a challenge but you might be able to do it with the Mushroom heals as long as you and your team's positioning is good. Some things will be difficult on this though I imagine. It sounds like fun though.

If you're not planning to go for top leaderboard places then anything works as long as you optimise Mag/Stam skills and gear.

Race/Class is meaningless for normal gameplay and casual veteran content. By casual I mean not going for the "very best" times. I have a friend with a Khajiit Magica Sorc and he has no issues getting DPS needed for trials.

So all those combos above at least have the potential to finish dlc vet trials?

NB tanks are not really effective nowadays.
And i really dont think that stam healing is effective in PvE (cause healer should not only heal but help with resourse management and buffs) thought it can be viable in PvP

If you're good at rotations and have the correct gear/team, yes.

You only need to hit 25-30k DPS to have a good shot at beating the trials, anything above that just makes it easier as you face less of the mechanics (due to faster boss burning).

Btw i have Nord stam warden mostly oriented for PvP with frost/bow build and i use her as tank for PvE vet dungeons and she also helps a lot with healing in PvP.

All your dps choices look fine. The Imperial Templar is not as good as the others, but you can still do more than enough damage to complete all trials.

Argonian Templar as healer is certainly a good choice, a Breton Sorc will also work when you know what you are doing, but will probably be a bit harder to play. However a stamina healer is something that will only work if your raid adapts to it or if the other healer can carry you.

Your tanks will not provide as much group support as dks, but if you just focus on your basic job (keep aggro and stay alive) then they will do just fine.

redguard is perfect for stamDK, you can't go wrong with it.
And dunmer allows magDk to be a permablocking vampire and get away with it.
If you ask for PvE purposes magDk dps is in a very bad spot , Its just bad for trials, no matter what race you pick.
For other classes Im no expert.

...you are asking the wrong question.

The one you should be asking (yourself):

Would YOU have FUN playing them???

Everything can be made to work, perhaps not at super-effectiveness, but good enough. Often making a less then super effective combo work for you is more fun, because then you have to -work- for your successes. And in the end, having fun is what ESO is all about, not having the most effective combo...
