Thank you, I found out that I did indeed get the fish; the loot info just didn't show down in the right bottom of the screen for some reason. Restarting the game fixed it (I'll do that next time before posting, sorry).

No need to apologize. When I first started using auto-loot, I used an undaunted key and didn't see the chest open or any loot so I sent a bug report to ZOS. ZOS responded telling me exactly what I got from the chest and when I checked, sure enough, those items were in my inventory. So, many of us have been there.

That's why its generally better to see everything you're picking up first.
