Pretty much none race looks as characteristic as in previous games. Just look at argonians and khajiit compared to tes3. Same goes for vampires. But since you mentioned Skyrim especially, I think it was bad there too. Most of the times I couldn't even tell a Breton from an imperial from a Nord.

The style of this game is a bit more cartoony. The male Nords do look kind of goofy, but overall I like this look better than Skyrim's. I won't compare Morrowind or Oblivion because the graphics are more outdated though I miss the digitigrade feet for the beast races from Morrowind. I do understand it's just easier to have all the same basic skeleton for the races for armor and animation reasons though.
I thought the elves were really ugly in Skyrim and greatly prefer their look in ESO. ALso the option for Bosmer to have horns is a plus.
The human races in Skyrim more or less looked the same.
I liked the Skyrim Argonian faces more than ESO's (which look more bulky) but I like ESO's bigger variety of head pieces like fins and feathers.
ESO Khajiit are fine but I would have liked to also have the Skyrim lynx/bobcat look option along with ESO's big cat look.
The Orcs look fine in both games.
