But separately so, to properly answer your question, my nostalgia wants to say the Oblivion theme.
And by say, I mean it's Reeeeeeing too loud over me considering any of the other themes.
That said, real lyrics to Skyrim's theme make it a more awesome song.

I've turned it off too, but not because I dislike it (well, not yet, anyway) but because the damn thing does a blaring endless loop when you load in, unless you're in a delve. Just annoyingly loud.

Summerset is also good and so where the release and beta theme's.
I also love skyrim's, oblivion's and morrowind's theme and i really like Daggerfalls and Arena's theme.
In fact, they are all great and depending on the game i play they really fit with their theme. The morrowind theme would not fit with skyrim for example and vice versa.٩(͡๏̯͡๏)۶
